INTRODUCTION TO AIH
Apeejay Institute of Hospitality, an Apeejay Surrendra Park Hotels initiative was officially launched on 5 th April 2007 at Navi Mumbai.
Apeejay Surrendra Group has been committed to educating and nurturing talent for many years. Apeejay Schools at Kolkata which are run by the Apeejay Education Trust will be looking after the Apeejay Institute of Hospitality at Navi Mumbai.
The Paul Foundation is the part of Apeejay Surrendra Group that awards scholarships to outstanding scholars who are committed to make a difference to the society through their work.
Apeejay Surrendra Park Hotels has had a successful structured internal training programme for over twenty years that charts the personal and professional growth of its employees. With this institute, the Group takes a definitive step forward by introducing degree courses for external candidates.
The institute will offer Executive Development programme for senior and mid level industry professionals. It will also function as an internal resource for training company executives through its Management Training Programme from which currently about 40 assistant managers graduate every year and Professional Development Programmes that are designed to meet organizational requirements for trained supervisory and executive staff.

Advanced Culinary Arts Facilitation Programme
Advanced Culinary Arts Facilitation Programme for Hotel Management Graduates. A world class culinary arts programme designed to enhance culinary competencies through on and off the job training with a clear focus on career placements in the hospitality industry.
Eligibility and Intake: Candidates who have completed 3 or 4 year Degree or Diploma in Hotel Management.
Maximum Intake: 20 Students per batch.
Duration and Commencement: Off the job training for 6 months at AIH
On the job training for 6 months with Specialization in cuisines such as Mediterranean, Italian, European, Indian, Oriental etc. Course will commence in July 2008
Curriculum: This tailor made curriculum focuses mainly on current culinary trends & practices, from culinary essentials to advanced gastronomy, from authentic regional cuisines to popular global cuisines by continuous research and development
Methodology: Theory classes, Demonstrations, Culinary Practical, Field Visits, Culinary Expeditions, On the Job Training, Specialization Training, Assignments & Presentations.
The first quarter of the program emphasizes the basic techniques, principles, and theories of baking and savory cooking, including doughs, fillings, cakes, sugar, chocolate, meringue, gelatin, and yeast breads in the baking segment and egg cookery, stocks and soups, sauces, beef, veal, pork, lamb, fish/shellfish, pasta, and game in the savory segment. This quarter focuses strongly on honing the hands on skills towards becoming a professional culinarian.
The second quarter would brief about regional Indian cuisines like Hyderabadi, North West Frontier cuisine, Tandoori breads & kebabs, Chettinad, Awadh cuisines etc.. Visits to specialty restaurants & visit to nearby village to experience authentic food shall be included in this segment of the course structure.
The third quarter concentrates on European Cuisine, primarily French, Mediterranean and Italian, including classic and provincial preparations and techniques. Students also learn Asian, Fusion, and other International cuisines.
The fourth quarter comprises specialization in any one or few cuisines offered from a limited list of most selling cuisines across The Park hotels. It shall also deal with Food Production management skills like Menu planning, Food Cost Controls, Staff organization, Food Festival & exams – theory & practical.
The highlights of the above structure shall include:
- Training imparted by AIH Faculty and Chefs from The Park Hotels as well as by visiting faculty
- Culinary expeditions & market visits.
- Culinary videos.
- Assignments, Research & Presentations.
- Food Festival & culinary competitions.
- Employability in the Industry / The Park Hotels
Venue: At Apeejay Institute of Hospitality, Navi Mumbai for off the job training.

Faculty: AIH Faculty and Chefs from The Park Hotels as well as by visiting faculty
Examination and Certification: Periodic Evaluation and Term End examinations will be conducted by AIH
Certificate will be awarded jointly by AIH and The Park Hotels
Fee Structure: One Lac per student which includes meals while on duty
Accommodation: Hostel Facility will be extended to outstation students at nominal charges.

Training :
On-going hands-on operational training at The Park, Navi Mumbai. Assured Industrial Training for 20 to 22 weeks in The Park Hotels. The students have an option to train in other Hotels as well.
Students are encouraged to take up careers with The Park Hotels; at the same time the Placement Cell of the institute would invite leading hospitality organizations to their campus to conduct On-Campus placements.
Research & Publications
The students of the Final year will take up Research in the areas of their interest towards the fulfillment of the curriculum.
Assignments
Students would be given regular assignments with field trips every week.

Admissions in progress for 2008 batch
Eligibility: 10+2 in any discipline. Candidates awaiting 12 std results can also apply.

Download the application form. Alternatively, request for it by mailing or writing to the Principal of Apeejay Institute of Hospitality. Attach the filled application form with the demand draft of Rs.500 drawn in the favour of Apeejay Institute of Hospitality, payable at Mumbai and post it to the given address.
Selection:
All the candidates will be invited to attend presentation on the institute along with personal interview with the selection committee at Apeejay Institute of Hospitality, Navi Mumbai on receipt of the completed application form. Interview schedule will be intimated to the candidate by the
